Video replay shows him at 375/375 but when I play hi it shows 375/300. I don't think he is doing anything funny. I think there is a glitch somewhere?

Do you have any evidence? I'd say it's a glitch though.. Also it's good to edit your posts instead of posting twice.. It's frowned upon but we're chillax don't worry;) :D

I had the same issue a couple of times when equipping and removing armour plates, the HP were higher then they should have been (ie above the maximum like you show).
I know this wasnt an exploit because it was me vs my son, in a friendly and both PC's were in my house.

It's a known glitch, where the max health shows lesser than it should. Don't worry, he's not cheating (:
